"Fairytale" fried chicken and chicken rip that burns like steak - the leading chef opens a new "Fried Chicken" stand in Tel Aviv • Israel Aharoni: "We wanted something we hadn't done before"

Chef Israel Aharoni is currently opening a Fried Chicken stand at Sarona Market in Tel Aviv called "Aharoni's". This is a "fairytale Fried Chicken," as Aharoni puts it. The chicken at the center of the dishes is soaked overnight in brine (a solution of water with salt and sugar that is usually soaked in whole chunks) and then seasoned, fried and wrapped in glaze.

"It's hard to explain how much we worked on his shell," the lead chef said, detailing: "A few flours and a few mixtures, until we reached the perfect result - a shell that would be very crispy, but not soaked in oil. Making a Fried Chicken dripping with fat and thick is a little wisdom. That's not what we opened for." The price of Fried Chicken is 64 NIS for 3 units.

The menu includes additional dishes such as: a chicken burger "that is not schnitzel, but a real meatball", they explain. It comes with dried pepper chutney, Sriracha aioli (NIS 54). Another dish they call "chicken toma" - a whole kneeling that is referred to in terms of preparation technique as chicken steak. It burns on the skin until maximum crispness is obtained (NIS 52).

You can start your meal with small dishes and vegetables, such as: chicken and cauliflower-based nuggets (NIS 28 for 3 units), glazed chicken popcorn (NIS 36), wings with or without Asian glaze (NIS 18 for a pair, NIS 42 for a six), roasted cabbage with miso butter (NIS 19), Asian greens (NIS 19), vine leaves (NIS 15), green salad (NIS 19) and more. On the side you can enjoy toppings such as: Dutch fries, creamy mashed potatoes or rice (NIS 19 per topping).

The establishment of this place by Aharoni, the senior chef who greatly influences Israeli cuisine, comes after the establishment of a chain of butchers operated by him and his children, and after the establishment of Rotisserie on Shenkin Street in Tel Aviv two years ago. Aharoni's is also founded by the chef together with his children Tamara and Uri.

"(This time) we wanted something we hadn't done before, food that corresponds with our DNA and can also work with the Israeli audience," Aharoni says, adding: "We bought the best equipment, planned the place like a smart submarine that would work with maximum efficiency, and we embarked on a new adventure - me, and Tamara, and Uri, and Nimrod (business partner), and the whole young and charming group that formed together in recent years. I'm terribly upset and feel very lucky. That's exactly what I want to do now and I'm enjoying every minute."
